Current Recipe: Baked Yams

Description: Yum!! Gluten-free

  • 3 lbs (1.35kg) yams
  • 1/4 cup (60mL) butter or butter substitute
  • 2 tbsp (30mL) honey
  • juice of 2 limes
  • 1 1/2 tsp (7.5mL) salt

Pre-heat oven to 400 degrees. Wash yams and poke each one here & there with a fork. Place on a baking tray with sides and add a cup of water to the tray (this will keep the yams from drying out). Roast up to one hour, depending on the size of the yams, until they are puffy and very soft. Remove and cool them to a comfortable handling temperature.

Peel the yams, place in a bowl and add all the ingredients. Mash until well combined and season to taste. For a silkier texture, this can be done in a food processor. To reheat, spread on a baking dish and bake for 15-20 minutes, until heated through. Serve hot.
