Current Recipe: Mushroom Rice Soup

Description: Makes about 6.5 cups.

  • 1 l water
  • 284 ml Can of sliced mushrooms with liquid
  • 284 ml Can of condensed cream of mushroom soup
  • 125 ml Chopped Onion (1/2 cup)
  • 75 ml (1/3 cup) thinly sliced carrot
  • 1 thinly sliced celery rib
  • 15 ml Chicken Bouillon Powder (1tbsp)
  • 7 ml Parsley Flakes (1 1/2 tsp)
  • 1-2 ml Dried Thyme
  • .5 ml pepper
  • 125 ml long grain white rice (1/2 cup)

Combine first 10 ingredients in large saucepan. Bring to a boil on medium-high.

Add rice. Stir. Reduce heat to medium low. Simmer, uncovered for 20to30 minutes until rice is tender. Freezes well. Makes about 6.5 cups.
